Cognac distilled in the 1970s by Guy Laurichesse, produced in a 12 hl still on the family property in Verrières and coming from the same chai as fut 104 and 301, but with an extremely lower yield: only 140 bottles!
Today Olivier valorises his father's work through the Le Chai de mon Père (formerly Hommage) range.
Each cask is carefully selected and bottled as-is to highlight all of Guy's work and know-how (no reduction, no added caramel, etc.).
Nose : Chocolate, oak spices and fruit. Very different from the 301 and 104 barrels, with an explosion of red fruits. Dried plums, figs, dates, red raisins. Overall, the nose is very different from the other two barrels and perhaps atypical but of rare elegance and richness.
Palate : Rich in flavor and texture. Sweet and sour. Dried and candied red fruit profile: pasta, figs, prunes and other candied fruits. Chocolate and spices. Oak tannins and bitterness from red apple peel. Almost imperceptible alcohol.
Finish : mango and apricot. Long and persistent.
